For a typical beer the color spectrum follows SRM- a scale which varies from light straw to jet black with varying shades of gold, amber, and copper in between. However when you crack open Roselle and pour it into glass its vibrant dark pink color defies the SRM scale developed over 60 years ago. Based on the color you might jump to the conclusion that it is flavored with strawberry, cherry or possibly raspberry. Instead Fair State uses hibiscus flowers to provide this sour with its brilliant pink color. The hibiscus contributes strong floral notes which pair with the sharp tartness to give a sharp citrus like flavor. The sourness dominates the flavor and provides a puckering sensation to play on your other senses.
